Sweet Potato Fries with Avocado Garlic Aioli
Last night, we decided to make these sweet potato fries as a side instead of serving normal potato chips for a BBQ we hosted. They’re a healthier alternative, and a little more work than opening a bag of Lays, but it was definitely worth it!
INGREDIENTS
4 medium sweet potatoes
1-2 tbsp avocado oil
Everything But The Bagel Seasoning (shout out to Trader Joe’s!)
DIRECTIONS
Important first step:
**Slice sweet potatoes into whatever thickness and length you like best and soak them in ice water or at least an hour. This helps with that crispiness that makes fries so delicious.**
Preheat oven to 450F
Place parchment paper on a large baking sheet.
Drain the potato fries from the ice water
In the same bowl, add 1-2 tbsp avocado oil, mix well so that the potatoes are all slightly coated.
Pour onto baking sheet and spread out so all the fries are flat for even baking.
Add “Everything But the Bagel” seasoning to your liking
Bake for a minimum of 45 minutes
*The timing can vary based on the size of your fries, so keep an eye on them.
AVOCADO GARLIC AIOLI
2 ripe avocados
1 tbsp avocado oil
1 tbsp olive oil
2 tbsp vegan mayo (I used Spectrum brand)
2 cloves fresh garlic, chopped
salt and pepper
DIRECTIONS
Peel avocados and add to a food processor. If you don’t have one, just mash everything together as best you can with a fork!
In a small frying pan, heat the avocado oil and the fresh garlic for just a minute or two. Don’t burn it!
Add the garlic and oil to the avocados, along with the plain olive oil, mayo, salt and pepper to your linking.
Process the mixture until it’s nice and smooth. The texture should be soft but not runny.
Top with a few sprinkles of “Everything but the Bagel” seasoning and you’re done! Enjoy!
