Pumpkin Pie Protein Balls

It’s time for all things #pumpkinspice! I was inspired by some fall treats I saw at the store today and decided to make my own healthified version.

Whatever it is, the way you tell your story online can make all the difference.

Makes ~12 bite-sized balls

INGREDIENTS

  • 2 tbsp vanilla protein powder

  • 2 tbsp almond flour (tigernut flour was in the original version of this recipe and is a great alternative if you’re working on gut issues)

  • 2 tbsp raw almond butter

  • 2 tbsp organic pumpkin puree (I refrigerated mine so the balls were easier to roll)

  • A little splash of pure vanilla extract

  • As many shakes of Pumpkin Pie Spice as you want! (cinnamon, allspice, cloves, nutmeg, ginger)

  • Optional: add sunflower seeds, walnuts or almonds to the mix for an extra crunch

  • Add dark chocolate chips for a little extra sweetness :)

DIRECTIONS

Combine all ingredients into a food processor, or whisk aggressively with a fork until combined thoroughly. The consistency should be thick enough to roll into bite-sized balls. Refrigerate after & enjoy!
