Sweet Potato Brookies

Brownie + Cookie = Brookie… a lame name, but they are what they are! Cookies with a brownie like texture. Doesn’t matter what you call them, they are healthy and delicious and I feel good giving them to my son as a dessert.

Alot of treats I make have nut butter as a base, but these are completely NUT FREE as long as you don’t use a nut flour.

SUPERFOOD INGREDIENTS: sweet potato & cocoa powder

INGREDIENTS

  • 2 tbsp melted coconut oil

  • 1 large or 2 small cooked and skinned sweet potatoes

  • 1/2 cup gluten free oats

  • 1/2 cup flour of choice

  • 2 tbsp pure maple syrup

  • 2 tbsp cocoa power

  • Dark Chocolate Chunks

Preheat oven to 300F.

Line a pan with parchment paper or a thin layer of coconut oil.

Combine all ingredients, cocoa powder last.

Spoon onto pan in desired cookie size. I made about 12 cookies.

Bake for 7-10 minutes. Cookies will be soft.

*Store in the refrigerator
