Kid Friendly Breakfast Cookies
My boys like treats, and so do I….these cookies are a hit in our household and I don’t feel bad at all letting my kids enjoy them.
You’ll need:
oats of choice, flour of choice, baking soda, cinnamon, salt, butter, coconut oil, maple syrup, egg, vanilla, pitted dates, walnuts, applesauce, and dark chocolate chips (optional)
RECIPE:
I used:
2 cups rolled oats (gf)
1/2 cup all purpose flour (gf)
1 teaspoon baking soda
2 teaspoons cinnamon
1/4 teaspoon salt
1/2 cup butter (softened)
3/4 cup coconut oil (softened)
1/4 cup + maple syrup (this is the primary sweetener so you can adjust the amount to your liking)
1 egg
1/4 cup unsweetened applesauce (for extra moisture, can skip for dryer cookies)
1/2 cup pitted dates, chopped
1/2 cup walnuts, chopped
1/2 cup dark chocolate chips
Preheat oven to 350.
Line two baking sheets with parchment paper.
Combine all dry ingredients — oats, flour, baking soda, cinnamon and salt and set aside.
In the bowl of my mixer, I added the softened/melted butter and coconut oil, egg, and maple syrup and mixed well on a low speed.
Next I added the dry ingredients and mixed at a higher speed until well combined. I decided I wanted a softer cookie…my toothless 8 month old was bound to have some (sans chocolate chips) so I added the applesauce for texture. Once that was mixed in I added my dates and walnuts and combined those as well.
I put half of the dough aside and then added my chocolate chips so I could keep some baby friendly cookies aside — personal preference.
Once my mixture was complete, I scooped about 1 tbsp size globs of dough onto my pans, evenly spaced…and I made about 20 medium sized cookies total.
Bake for 11-13 minutes (might be slightly longer if you added the applesauce)
Let cool completely before removing from pan, and store in the freezer for longevity.
