Super Simple Protein Bars
Okay a lot of my little treat recipes are similar in their ingredients, but I have been trying to sneak extra protein in as I get back into training WHILE breastfeeding — these bars are so delicious and filling, and super easy to whip up.
You’ll need:
Protein powder of choice, water, oats, maple syrup, flax/chia seeds, peanut butter, 1 bar of dark chocolate, coconut oil, silicone mold.
I have been loving this chocolate protein.
RECIPE:
1.5 scoops protein powder
1 cup water
2 cups gf organic oats
2 tbsp pure maple syrup
1/4 cup chia flax mix
~1 cup smooth natural peanut butter (you can vary the amount based on how much you like pb)
generous pinch sea salt
1) In a mixing bowl add protein powder and water and whisk until blended and relatively smooth.
2) Add oats, maple syrup, chia, and flax seeds and mix well. Let sit for 5-10 mins so the oats can absorb the liquid a bit.
3) Next add your generous scoop of natural peanut butter (~1 cup) and mix well using a large spoon.
4) Evenly distribute into your silicone mold — I filled TWO molds with my mixture, filling each bar cavity about halfway.
5) Separately in a small sauce pan, slowly combine the chocolate and coconut oil over low heat until completely melted. Remove from heat and do your best to evenly pour over each individual mold cavity — I purposely didn’t make enough chocolate to add an entire layer of chocolate, I wanted more of a “heavy drizzle” on each bar. Use two chocolate bars if you want a more aesthetic top layer of chocolate.
6) Optional: sprinkle sea salt over chocolate before it hardens.
7) Place molds in freezer for 30 mins or until chocolate is completely solid, and then pop your bars out. Store in the freezer and pull a few out at a time to thaw.
