Pumpkin Dark Chocolate Chunk Cookies

This is a super simple fall cookie recipe. A healthy option to bring to your ‘friendsgiving’ or thanksgiving celebrations.

INGREDIENTS

  • 1 tbsp. melted coconut oil

  • 1 tsp. coconut oil, unmelted

  • 1 egg

  • 2 tbsp. pure maple syrup

  • 1 tsp. vanilla extract

  • 1/2 can of Pure Pumpkin Puree

  • 1 scoop marine collagen

  • 1 cup almond flour

  • 1/2 cup GF oats

  • dark chocolate pieces of choice, we used 3 squares of Hu salty dark chocolate sliced up


    DIRECTIONS

Step One:

Combine melted coconut oil, egg, maple syrup, unmelted coconut oil, and vanilla until it’s all nicely blended. You should have small chunks of coconut oil hanging out in there.

Step Two:

Add the pumpkin puree to the liquid mixture and stir it well.

Step Three:

Add the dry ingredients one at a time (order doesn’t matter), stirring well in between each addition. Lastly, stir in your chocolate — err on the lighter side so you don’t drown out the delicious pumpkin flavor.

Final Step:

Scoop tablespoon size globs of dough onto a parchment lined baking sheet. Top each glob with a couple extra chocolate pieces and sprinkle with sea salt.

Bake at 350 for 14-16 minutes , time will vary depending on your oven!
