Heirloom Tomato Salad

This summer salad was one of our favorites last year. This recipe is so simple, and the end product is beautiful and delicious.

Serves ~4

INGREDIENTS

  • 3-4 heirloom large tomatoes, I got mine from a local farmer’s market

  • 1 small, fresh ball of mozzarella cheese

  • 2 tbsp balsamic vinegar

  • Fresh basil

  • Salt & Pepper

*You can also modify to make this vegan by using a dairy-free mozzarella. We used some from a local vegan cheezery while we were living in Canada and it was a great way to avoid dairy.


DIRECTIONS

Use a very sharp knife to slice the tomatoes to your desired thickness.

Also slice the ball of mozzarella to a similar thickness, the best you can — i struggle with this.

On a tray or plate alternate placing tomato slices with cheese slices, then add basil leaves within as frequently as you’d like. 

Lastly drizzle the balsamic vinegar over the whole salad. Salt & pepper to taste. Let it sink in for a few minutes before serving.
